Ive made this so many times and every time has turned out fantastic.
4medium egg whites…at room temp
225g golden caster sugar
1 tablespoon of sifted cornflour
1 teaspoon of vanilla extract
2 teaspoon white wine vinegar
450g chopped strawberries
284ml double cream
200g creme fraiche
Cut out a 9 inch circle of baking paper and place onto baking sheet
whisk egg whites in clean bowl using electric whisk…..or chef, until stiff. Gradually add the sugar a tablespoon at a time, continue to whisk until glossy. fold in cornflour, vanilla extract and vinegar.
pile meringue on to circle paper and spread to the edges.
bake at 110c for 90 minutes until firm around the edges.
to assemble whisk cream add creme fraiche and fold in strawberries.
add to merginue and serve.
