Rissotto’s are a fantastic way to use your leftover cooked rice and sausages or any other meat you have in your fridge.
One tablespoon of oil
One onion chopped
One carrot finely chopped
Two or three cooked sausages
400g of leftover cooked rice
400g tin tomato
One tablespoon of tomato puree
Pinch of mixed herb
And I always add a chilli from our chilli plant
Heat the oil in a frying pan.
Add onions and carrots and cook until soft.
Add the chopped sausages and rice and stir for a minute.
And the tinned tomato and puree with the herbs and chilli
Stir together and bring to the boil and simmer for five minutes
Add a little water if needs be
Serve with grated cheese.
This always goes down well with the family. Its super quick too
